Our Natural Honey Varieties*:
Seasonal Victorian Honeys produced from various flora eg: gums, box trees, stringy and iron barks. Production, storage and packaging methods are designed to retain the goodness of honey. Available in 500g, 1Kg, 3Kg.
Creamed Honey -"Traditionally made creamed honey is smooth, bright attractive appearance and mild sweet flavour. The honey is whipped to control the natural crystallisation process and is then stored under refrigeration until set. Nothing but honey is used for this special treat."
Honeycomb - "Eat by the spoonful, chew blissfully until flavour is gone, then discard the beeswax, or if you like, serve with cereal and yoghurt, or mild soft cheese." (150g piece or in honey 325g jar) NOW AVAILABLE - Honeycomb untouched by human hands!
Yellow Box
-Yellow Box is one of Australia's most popular honeys. Yellow Box Eucalyptus melliodora can be found from Darling Downs in Queensland through to Horsham in Victoria, with the main flowering period from September through to January. It is a smooth flavoured, very dense with a characteristic pleasant aroma. Light to golden in colour, and slow to granulate, it makes an excellent spread on bread and crumpets. It is also well suited to chinese cooking and as a baste for lamb roasts and poultry.
Kamarooka -From the Central Victorian Kamarooka mallee, Yellow Box honey-lovers will enjoy this as an alternative, a delicious honey!
Grey Box
- Gold to amber in colour and firm in texture, this bush honey has vanilla and sweet spicy notes on the nose, with buttery hints following through to rich, mellow tones in the mouth. It makes an excellent spread on bread and perfect for hot buttered toast or crumpets. It is also well suited to chinese cooking.
Iron Bark
-Iron Bark Eucalyptus crebra trees flower throughout the year and these species are widely spread through eastern Australia. A premium honey with characteristic delicate aroma, good density and light colour with a gentle sweetness. It is an excellent flavour enhancer in the baking of cakes and biscuits as well as a sweetener in tea and coffee. A honey connoisseur's favourite.
Red Gum
- The Red Gum honey produced in the Milawa Gourmet Region, from along the Ovens and King Rivers. Red Gum is a popular honey suitable for rich golden coloured honey with a bold flavour, easily recognisable aroma and excellent density makes Red gum a favourite of many honey consumers.
It is suited for use in teas, honey milkshakes, marinades, creamed honey or your favourite recipes like baking bread or Italian Honey Biscuits.

Mallee -
"The Mallee region may be hard country, but it produces fine honey with good density. This smooth Christmas Mallee is sure to be a favourite at breakfast time especially when spread over Hot Cross Buns. Also good for making honey biscuits."
Jellybush - Jellybush honey is one of the Phytoactive honeys from the Leptospernum family, only found in Australia and New Zealand, cold extracted and processed specially to retain the beneficial enzymes and phytoactive properties. It is widely distributed within Eastern Australia, but like Manuka, it's New Zealand relative, it's activity level varies depending on its location. The pristine coastal forests of Northern New South Wales in Australia produce an Active 16+ Jellybush Honey.
Long Leaf -
Mudgegonga
- "Blue Gum/Apple Box honey from the forests of the Mudgegonga Valley, more richly flavoured than Red Gum and will be excellent spread thickly on scones, pancakes, muffins & toast. It's even better on porridge & baked into ANZAC biscuits & honey oatcakes."
Murray Valley -"Extracted from hives working Blakely's Red Gum (commonly called Hill Gum by beekeepers) and Yellow Box trees situated in the Hume Murray Food Bowl. A little sweeter than River Red Gum."
Stringy bark -Strong flavoured, medium amber honey from the Great Dividing Range.
Orange Blossom
-(325g only) Something special for that late breakfast. Spread onto croissants or stir into your favourite black tea. A lighter variety that make a wonderful sweetener for cereal, tea, fruit salads and salad dressings.
Salvation Jane -Light, golden and delicate. From New South Wales and South Australia.
Ti-tree - A very strong flavour used mainly in manufacturing. From the north and south.
White clover -A mild, extra white honey that candies smoothly.

Sweet Meadow White Clover Honey

Tasmanian Leatherwood R.Stevens Mole Creek,Tasmania. Available in 500g, 1 kg Leatherwood honey has a strong flavour and particularly distinctive aroma. It is unique to Tasmania and has established a worldwide reputation as a distinct honey type.
The leatherwood flow is from early January to April. Leatherwood grows in rainforests in the southern and western areas of the State of Tasmania largely within regions managed and controlled by State Government authorities as either production forests or the World Heritage Area.
